食肉の需要は今後40年で2倍に達すると見られているが、現在既に農業生産量の7割が食肉用家畜を育てるのに消費されているという。このままいけば確実に破綻するため、代替肉の開発は避けられないとポスト氏は言う。研究対象として牛肉を選んだのは、牛が消費する食糧と実際に食卓に上る牛肉との関係が最も非効率であるのが理由だそうだ。
